I would say something. OHH trust me.
First I would look at them with a face of disgust.
Second, I would go up to the person and ask them to not sneeze by the salad bar again. N I would give them a sermon on germs and the staff infection.
lol.

I would bring it to the attention of the manager, and I would expect that the food be replaced immediately, and that he give the sick person a gift certificate for a free meal, but he would need to leave now because his sneezing is a health hazzard.

I'd hope he/she had the common decency to cover his/her mouth and turn away. But I still wouldn't be eating from the salad bar that day.
