We want to get our boss something but all we really know about his personal tastes is that he likes deer hunting and canoing in the border waters - neither are something we know anything about. What is a safe gift for a deer hunting enthusiast?

You can buy him a gift card to Gander Mt. It's all hunting stuff there. Or you can go there and ask one of the people who work there for suggestions. Good Luck!

They sell bottles of deer pee that attracts bucks...or you could go with the simple/can't go wrong gift card to a outdoor sporting store.

It depends on what equipment they already have?

GPS, Scope for riffle, hunting books, bugles, binoculars,
skinning knife, boots, stands, maps...
take a look on a hunting sight on the net, you can get an idea that way or in a hunting magazine.
hope this helps
