High powered microphones. One time I was able to get a field pass where you're allowed to walk on the field prior to the game (not on the field itself, just the sidelines). I talked to the guy from FOX holding the glass dish microphone.
He put some headsets on me and pointed it toward 2 coaches standing 30 yards away. I could hear their whole conversation. It was really cool. Those microphones are really powerful, and pickup game sounds very well.

They shoot lasers into the players eyes, that's how the NFL keeps games close. For example, Devon Hester's dropped pass, wide open for a TD, then BAM! the laser in the eye and he drops the ball. T.O. in the end zone then BAM, ball pops out and the Pack intercept it. Reggie Bush has an easy pitch then BAM, the ball goes flying and the Saints lose.
FIRE THE LASER!!

They are microphones.
The dish amplifies the signal and makes the reception more directional.
