I don't know if you'd consider this a major university or not, but UNLV (University of Nevada, Las Vegas) has a pretty good and rigorous course of study in Nutrition Science. You can take these classes to prepare for a master's degree or to become a registered dietitian. There website is http://www.unlv.edu

Click on course catalog and then click undergraduate catalog and on Nutrition. This will give you an idea of all the classes needed for the major and how the major is broken down into professional area.
