I know L88 corvette, Yenko camaros, novas and chevelles and other specialty cars are super rare. But what is the absolute rarest of the rare chevys today?

rarest would be the 1st Chevy ever built.

The rarest Chevrolet production car is the1969 ZL-1 COPO Corvette. There are only two documented cars known to exist. Supposedly there is a third one, but it can't be documented. Next would be a tie between the '67 L-88 Corvette and the '70 Chevelle LS-6 Convertible, at 20 each. Other than that it would be one-off prototype's or concept cars.

You mean like the all aluminum engined 427 Camaro in 69 or just run of the mill accidently rare 72 Z28 (only around 2500 built, prob. around 1000 survive) because of some unforeseen strike that year?

The 63 Corvette Grand Sport. To my knowledge only five were ever built.
