They usually are rebuilt for another model year as these molds are expensive and modified for other models. Sometimes an aftermarket supplier will obtain these.
If you need parts look for restoration parts or hang out at swap meets.
I actually found a replacement spoiler for my 71 Pantera in Kansas City at a Swap meet here, this was sitting on the guys trailer and I saw it and got real nervous as these are VERY RARE and I asked him what that went to, he had no idea so I was happy to pay 25 bucks for a part that runs 3-400 if you can find it.

They remachine the dies when they can or cut them up for scrap when they can't be modified anymore.
I just restored a 66 Ford convertible. I looked in my Mac's antique auto parts catalog and they don't have a quarter panel repair for the 66. They have one for 65 which I thought was the same but if it was they would say so.
Google 1966 Ford parts. Someone else might have what you need.

Red is right - they get recycled by selling them to aftermarket vendors, or else overseas if the car model is produced there yet. Those dies are expensive to make, so the manufacturer doesn't want to just sell them for scrap metal if they can get more for them.
