Rock is defined as "...any mass of mineral matter, whether consolidated or not, which forms part of the Earth's crust. Rocks may consist of only one mineral species, in which case they are called monomineralic, but more frequently consist of an aggregate of mineral species." There is one mineral in quartzite: quartz. If other minerals are in it modifying terms can be used to further classify it. Without these terms no other minerals can be assumed to be in it.

A rock is a relatively hard, naturally formed mineral or petrified matter. Quartzite fits into this definition in that it is formed by a natural process. It is formed when sandstone is metamorphosed due to heat and pressure, it can be formed in two ways, (high heat and pressure) and (low heat and pressure). The rock's main mineral is quartz but it may contain other minerals as it is evident in the different clours that the rock occurs in.

Quartzite is definitely a rock. I'd have to see your quartzite (and probably a thin section of it for microscopic analysis) in order to say what minerals besides quartz are in it. Feldspar and rutile (titanium oxide) are possible constituents. It could have may other minerals as well depending on how impure the parent sandstone was.

A rock is an assemblage of 2 or more minerals that is formed by igneous, sedimentary, or metamorphic processes. You can have rocks however that are largely one mineral, like dunite, biotite schist, quartzite, etc.
Quartzite is typically just quartz, but it can have some orthoclase feldspar in it as well. It is a metamorphic rock formed by metamorphosed sandstone.
