what does the new orleans saints symbol represent?
it's also commonly used in Chrome Hearts clothing.

and does it matter that i wear earrings of that symbol, and i'm jewish?

The Fleur di Lis is the symbol of France and the French people. If it has ANY religious significance, it is because it goes back to the reign of Charlemange and his claim to the the throne of the Holy Roman Empire, which, in effect, meant, the Catholic Church.

However, this was a thousand years ago, and the descendants of those people, meaning the French speaking world have adopted the symbol to mean all things Gaellic. That includes France, French Canadians, and, the Arcadians that settled in Louisiana, who now call themselves, Cajuns.

As a simple pattern, such as in the clothing line you mentioned, it would have, absolutely NO religious significance. I once had a pair of blue boxer shorts with very tiny Fleur di Lis. I doubt it would shock anyone is much as my wearing an image of the Virgin Mary on my tidy whities would shock my sainted mother.

It is French...the Fleur de Les. It doesn't have religious significance. It has royal significance. Enjoy your earrings. New Orleans rocks! I should know, it's my hometown.
