I am 6'3 170 pounds and my shoe size is 11.5. I hear that the longer the snowboard the faster I can go. The board is a 2008 Ride Yukon.

I think that is probably too long for you - yes, you are very tall, but snowboard length is based more on weight than height. That "between chin and nose" is only a general rule if you are height / weight proportionate. You are thin, so a board that lond would be a lot to handle, especially if you are learning or trying to ride in the park.

It says that you should be riding a 162 which sounds more resonable to me.

Sounds like this board might be too long for you. At 170 pounds you will have to really work this board to make up for your lighter weight. Longer boards do give you the ability to carry more speed, but skill makes an even bigger difference. Don't go for a really long board until you are a fairly powerful rider.

it should just come up to your chin or a little higher. and if you're a beginner, a long board is hell. unless you're like friggin amazing at skating.

hold it up to yourself, it's not supposed to go any higher than your nose or lower than your chin. But some people think longer boards are easier to board on

It should come up to about your chin or a little bit higher.
