For me it's the Emperor (Final Fantasy II), Raem (Final Fantasy Crystal Chronicles) and ExDeath (Final Fantasy V).

Sephiroth, most epic final boss ever. He had two forms and each were difficult enough to pose a threat...I couldnt have asked for more from a boss...

Sephiroth because his SuperNova literally made me crap my pants, bringing my guys HP down to 210. Things that puts me on the edge is something I like.
I like Sin too because his Overdrive literally killed your party. It was actually game over when he used it.
