There are several reasons.
1. They are academic gowns, and most judges have at least a Bachelors Degree in Law (LLB) or a Masters degree (LLM or a M.Juris.) A very small number may even have a Doctorate degree.
2. Tradition & Ceremony.

Forget the 'Academic gowns' BULL ****

The ONLY reason with any meaning today is TRADITION. Whatever the original reason was, 99% or JUDGES don't know.
