It wouldn't affect them, would it?

of course you can...you think Godiva and hershey make their chocolates the night before you get them in the store...no...go ahead and make your molds...good luck...but remember to keep them in the fridge so they dont melt

Like Leann said, yes. Besides putting them in the fridge make sure you put them in a covered container away from other foods. Chocolate can absorb odor from onions, garlic, etc. Otherwise you're chocs will be fine.
