When choosing a name you should make it something that when someone hears the name they can get an idea of who you are... Try writing random letters and mixing them up... Seriously I mean how do you think people like Akon got there rapper name...

Challahback only works if you're trying to play up the Jewish heritage part. Which is fine by me. If that's not what you're going for, then something like Jay-T might work. I know that's not that creative but your music will be what sticks with people.
