Let's say they had parents from different nations and held dual citzenship to those nations, then, because they were Jewish, became an Israeli, could they still hold all three citizenships?

Depends on the laws of each country but, yes, it is possible in theory and reality.

The actor, Mike Myers was born and raised in Canada and has had a career in the USA. His parents were from Scotland. Thus, he has British, Canadian, and American citizenship.

My wife does. Born in India - emigrated to Australia as a child - married to myself from the UK.

depends on what the other two countries are.

USA + EU + israel? probably

Iran + Canada + Isreal? probably not
