My parent's resuarants are doing terrible.
The food is good, and it's a big building...what's going on?

Location, location and location? Is it near other restaurants? Do you advertise? Do you have a customer appreciation program? What businesses are around it? More during the day or night?
Lots of things to look at.

Are they doing cost analysis on their foods they serve, and the portion sizes against the menu cost? Are employees stealing, fudging their time cards? Do the servers not have good personalities and do their jobs? Is the place spotless and restrooms immaculate? (I had customers who wanted to see the restrooms before they were even seated to determine if they wanted to eat.) Are they paying too much for labor? As in, if it's slow, send people home early. Do they advertise monthly specials? Have to-go menus?

There's an adage I learned in management class. "If a customer has a good experience, they tell an average of 9 other people. If they have a bad experience, they tell an average of 26 other people."

expense
advertisement
good word of mouth
what is your competition like?
what are the employees like?
cleanliness
Are you catering to the customers in a polite and timely fashion?

There are tons of different reasons why, your best bet is to ask the costumers what they think of the place.

service.
i hate to have to beg a waitress to fill my coffee cup or glass of water.
fast service with a smile.
it's all a service thing. i have seen places booming with poor food, but great waitresses
