i work for a 180 man privately owned company. At what rate should i swap bonus for equity.?

Yes = 9 out of 10 unquoted companies go bust... on the other hand those who took equity in Microsoft are now all millionaires ..
If you don't need the cash now, go for it .. (you will kick yourself later if it succeeds and you didn't invest)

If you believe in the company then do as much as they will let you. If it is just a job then take the bonus.
