It depends on what you're trying to say. If you use the past tense of the verb "to eat" with a period of time, the implication is usually that at some point prior to that, you did not eat. For example:

"I was starving when I first came to school, but thanks to my new job I've been eating well for weeks."

Another possible usage of "to eat" plus a time frame is to single out a specific food that you only recently began eating. For example:

"I had never tried sushi before, but since Jack brought itin, I have been eating it for weeks."

The implication on that last one, though, is that you have been eating mostly or entirely the type of food mentioned - that you've been eating it consistently for weeks.

Note that BOTH of these imply the passage of time, and describe continuing actions. If you want to describe an action that started, went on for some time, and ended, you would use "had been eating" instead of "have been eating".

And, if all you wanted to do is say that at some point in the past you ate something, and not imply that it went on for a while, you would use "I ate" and drop the "for weeks."

And just to complicate things further, if you wanted to say that something happened, a few weeks passed, and then we have NOW, use "I ate a few weeks ago."

Makes you kind of want to go learn Esperanto.
