The VIN you posted is missing a number,,,
MY assumption is that's just a common Typo.
In any case,,,the Engine's Unit Serialization falls within Model Year 2000 range according to Kawasaki's records
Compare Kawasaki's Published Beginning 2000 serial number to their beginning 2001 s/n.
You'll see that the number you posted falls AFTER the 1st 2000 and Before the 1st 2001.
That makes it a 2000 model

In Most States in USA it's a crime to pull a stunt like that.
And in any case,,,You are looking at bike that is over TWICE as Old as you Suspect it is.
A 2004 at end of '07 is about 3~4 yrs old
A 2000 at end of '07 is about 7~8 yrs old
It may be in fine condition,,it may be UN-used.
And all of them are virtually the same,unchanged model.
Nevertheless,,,there IS a difference in 3 year old Seals,Gaskets,Hoses and several other conditions and items,,,,,and 7+ yr old ones.
I'm sure the sale price was based to some degree on Age/Year Model.
And so will be it's Resale price whenever you might chose to dispose of it
