The sharpener applies a given torque to the tip, which your hand must counter. You can grasp a greater surface area A to countertorque the shaft if there is more pencil length sticking out. That means less pressure P is required on your palm. Torque is N=A*P*R

where R is the pencil radius.

Well, longer pencils mean more wood to grasp. That means, a stronger grip. So, the force you are applying on the pencil, to turn it around, is evenly distributed among your fingers. On the other hand, with a very short pencil, you are only holding it with two fingers. So, they have to apply more per finger force to make it rotate the same amount.

possible because of the length of the pencil, you have more leverage when turning it. like a screwdriver (possible, but there is really no lever arm as the width is the same.
