No offense meant but a veneer Plywood would be fine. I personally see no need to relate a work table to any FINE wood.
Plywoods/ Laminates have existed for more than 4000 years; and their very nature in fabrication dictates each perpendicular layer adds to the strength of the sheet.
You mention Oak so one might assume aesthetics matters?
With the proper bracing a 3/4 inch or perhaps even 1/2 inch sheet of ply could hold up a VolksWagon. I'm pretty sure it can withstand the combined weight of two children.
I think I read in another answer; and I concur...I might be more concerned with how you design the chalk board side, in an UP position; with regard to safety.
I might design it to have a brace system that allowed the top to REST and do a table wide Cleat on the wall studs; to attach the table in a folded upright position; for chalk board use. That way the table is always useable on opposing sides; and the bracing can fold into/against the wall, or be stored elsewhere for ART time.

If I were doing this project I would get a 4'x8', 1/2" birch plywood. I would glue the cut pieces perpendicular to eachother and put a trim around all edges.
I say birch because it takes paint and stain very well and will take a good coat of lacquer on the work surface.
The plywood is very strong, and is very forgiving of young children climbing on it! Oh, and Dad, some of your projects will be heavy too...plywood will take your punishment as well!

Are you familiar with multi ply plywood. This is the stuff you see in somewhat high quality cabinets. Most often used as drawer sides. A 7/16"in. thick piece could have as many as 7 to 9 layers of veneer. Its often referred to as cabinet grade plywood. It is very stable, and strong.

I would go with pine 2x4 base with 3/4 inch plywood or mdf both plywood and mdf wood hold just about anything you want to put on it and are very easy to work with.
