one word-FAT. A steer has more fat than a buffalo. Fat makes meat tender and tasty. Buffalo cooked right is pretty good. Try eating a ribeye steak from each one, and you tell me which one is tastier. Fats where its at!

I have had both burgers. I am more use to the Cattle but the buffalo is good and a nice change. You can't get them just anywhere. Buffalo is a bit gamey but not too bad it does have a lot of flavor. I love Deer mmm Venison bbq.
