I'm not sure about castles in China, but castles in Japan were introduced by the Portuguese in the 16th century. The Portuguese also introduced the firearm. Many castles were built by the three Japanese unifiers: Nobunaga, Hideyoshi and Ieyasu.

I suggest that there are as many "castles" in China as in Japan. The difference is between "castles," "palaces," and "forts." All through Chinese history there have been war lords who ruled locally from forts. In Japan, there are only a few "castles," such as the one at Osaka. I am minded of a vacation I had in Germany. I arrived in a town, and I expressed interest in visiting the ruins of "das Schloss" on the hill outside the town. People laughed at me and said, "Das ist nicht ein Schloss; das ist eine Burg!"

historically, China was much more isolated than Japan, and therefore, the architecture of the outside world made less of an impact on China.
also, under dynastical rule, there was no true use for numerous castles because there was but one leader.
