Thinking. It is indirectly taught, piecemeal, in some subjects. Teaching thinking would probably improve the experience of other subjects.
In past school days (although not for everyone) 'observing' was thought to be very relevent to education. This has unfortunately declined.

Sorry for the long length, but I have a lot to suggest. :-)

1. The scientific method. Not simply how a proper experiment should be conducted, but WHY using the scientific method is the best way to ensure that the knowledge you gain from science is the most reliable.

2. Rational thought. Logic, logical fallacies (there are a lot), what constitutes supporting evidence in an argument or experiment, avoiding personal bias, and just plain practicing at rational thinking.

3. Civil liberties. Not just our bill of rights, but also the reasons WHY a freer society is both a more stable, more content and more prosperous society.

4. Micro- and macro-economics. Every high school graduate should have a good grasp of supply & demand curves. (This could even be taught at the jr. high level, soon after students learn about graphs.) Economics should also include lessons on how gov't spending distorts markets, the differences (economic, not just ideological) between socialism/communism and free markets, and of course, personal economics like making a budget for your household.

5. At least a general overview of philosophy and its schools of thought, including epistemology. Most students never learn any philosophy until college, if even then.

6. Calculus should be for regular students too, not just the honors kids. That would, of course, require raising the quality of math education in general. Which brings me to my final suggestion:

7. We desperately need to improve the quality of education in ALL subjects. Throwing more money at the problem won't help, because most school spending goes to bureaucrats & administrators rather than to the actual teachers & classrooms. We do know how to improve education, all that's really standing in the way are the politicians, teachers' unions, & school district bureaucrats. Both in theory and in practice, the following have produced some of our best schools:
a. Teachers should be paid by merit rather than tenure. There's no reason why a crappy teacher should receive the same pay as a star teacher.
b. Schools should have the ability to easily fire teachers for poor performance.
c. School spending money should be attached to the student rather than the school. Students should be allowed to attend any school they want (so long as the school has room to admit them). Competition has beyond any doubt improved the quality of every field and institution; it's time we let it improve K-12 education as well. Even the poorest students will benefit, because even the crappiest schools will have an incentive to improve.

Our K-12 education system sucks, and the bad part is that most people are ignorant of just how bad it is. (They don't know what they don't know.) By looking at all the best schools and seeing how they do things, we can learn lessons that we can apply to other schools. The biggest barrier to change, I think, is the refusal of the teachers' unions to accept any reforms that might endanger some of their jobs. They are, unfortunately, more concerned with job security than job performance, and for that the rest of society suffers.

I rarely agree with the Oracle, but it is the art of thinking that must be taught. America's founders were the last generation to get the full benefit of the teachings of the Renaissance. The standard subjects were called the trivium, consisting of grammar; rhetoric; dialectic; and the quadrivium consisting of arithmetic; geometry; astronomy; and music.
These were the original Seven Liberal Arts. The liberal arts of today are whatever seems to be the most politically liberal, which is not what "liberal" means educationally.

And yes, studying those would eliminate new generations of sheep.

Critical thinking, Relevant History (England teaches the Russian revolution, but not the Empire...), Philosophy, Basic Survival (Like how to pay bills, NOT have credit cards, fill in tax forms), Computing (as in a bit more than "Click here and you can buy things, isn't the internet great?").
Theres so much more, but it basically involves teaching people their and world culture, both past and present, how to survive, and how to think and solve problems.
