I want ot become an office assistant, if that is any better. I want to later become an innkeeper.

An assistant just means that you help someone else; in many cases it is a stepping-stone to being something else. What you would major in would depend upon what you were assisting - a medical assistant would have a different background than an account assistant at an advertising agency or a legal assistant.

If what you mean is an administrative assistant (often referred to as a secretary), then what you would need to know would be the Microsoft Office Suite, and you would need good skills in English. Depending upon the type of organization you would work in, it might be useful to have an understanding of that type of a business or organization. In that case, being a management major or something like that might be helpful.
