The Elite has a bigger hard drive and HDMI , the Xbox 360 Premium has a smaller hard drive, but they both have hardware problems and have a high chance of getting the Red Ring of Death

Elite comes with a 120 Gb hard drive which will give space to save lots of music to play during games like Skate that do not have a soundtrack. You can also save your games and music without running out of space. Elite also comes with online Gold. I think it also comes with the HDTV cables which will cost you more than the difference in price.
The premium has 20 Gb, which is adequate to save your games and maybe 200 tunes without running out of space. I think the premium comes with online Silver. I play this model on a 65" DLP. I borrowed the other cables from a friend but don't think its worth an extra 90 bucks.
With both you can buy extra memory, but it is only good for games. You can not store extra music on the added memory.
Both are wireless ready whereas the Core model is not.

The elite is black and comes with a bigger hard drive and hdmi ports. The premium has a smaller hard drive.
