Write her a poem or a very nice letter and put it in a card. Give her one of those "our first christmas" ornaments with your names inscribed. Then do a gift certificate for a spa day in a gift basket with some candles, lotions, soaps. A gift like that would make my heart melt, too bad my boyfriend is oblivious to women's needs lol. I really think she would enjoy those presents and they would mean a lot to her. If you want to get her something else ask her friends what she has been wanting - maybe a certain sweater or pair of earings or a cd. Good luck and Happy Holidays! This year is my second Christmas with my bf, and the best thing to me would be something small but memorable. I don't need an exensive weekend away or jewelery to remember it or make it special to me.
Buy a card and in it, write a bit about how much she means to you and how excited you are about your first Christmas together. Just a line or two. Then write a formal invitation - tell her to get dressed up and you'll pick her up on this date at this time. Bring her a single flower (girls like that - it shows you took the time to pick the perfect one, instead of just grabbing a bouquet) and pick her up. Take her to a really nice restaurant.
At the end of dinner, take her to a special Christmas event. In our area, there's a botanical garden that does a huge Christmas event all month where the gardens are decorated with lights, there's a new choir each night, hot cider, etc. It's really romantic and really fun. Or, and this would be my personal favourite, if there's a symphony in your area, buy tickets to their Christmas special and go there after dinner. (Or before, depending on the time of the show.)
After that, I think your gift to her can be something she really wants and doesn't have to be jewelery or something else that you "think" she wants (or that's cliche).

On our first Christmas my husband and I we went snowmobiling, had a snowball fight, danced in the snow and went inside and heated up some brandy, and danced to Christmas music... It was very romantic. Think of the experience more than the gift. Memories last longer.

Go to a bed and breakfast, or take a weekend getaway (or a week, if money is no object). OR if you have a fireplace, light a fire, make some hot chocolate, and just sit there and talk! So cute!

Hmmm...whats something you both like to do. Like may be a getaway for the weekend or just telling you how you feel, in a romantic setting. Anything like that would be nice.
