Jews observe Passover every year; it's a central holiday in our calendar. You asked why, and I think, so far nobody has responded to that part of your question. Our sojourn as slaves in Egypt, our deliverance from there, then our being given the Law at Sinai, are the central defining episode which crystalized a loose band of Bronze Age nomads into a united people who still survive as a nation roughly 3600 years later. That episode is what defines our relationship to G-d, just as Jesus dying on the cross and being resurrected is what defines Christanity.
It's so important, we remember the deliverance from Egypt in our daily prayers.
The Festival of Passover itself, as celebrated today, is eight days long (seven in Israel), with specially prepared foods eaten, and an extended, elaborate ritual-and-feast (the "seder") celebrated in the home the first two nights. We honor the ancient Temple sacrifices with symbolic foods. The holiday has acquired many traditions, and customs, and it's very festive.

The "Passover" meant in 4 is the sacrifice brought on the 14th of the month, to be eaten that night. We don't do that, as Deuteronomy 13ish says that it must be done by the central Altar, on the Temple Mount in Jerusalem, but that Altar was destroyed by the Romans and we don't know exactly where it is- we can get it within a few dozen feet, but that's not close enough
