She is very superistiouse so I don't want to do anything to offend her. She is very nice and I like her and would like to do something.

If you are concerned, simply ask her. Let her know that as a tradition, you normally give all your clients a gift at Christmas time. But you are concerned that it might be offensive to her, so you want to know her preferrence. Ask also if there is a different holiday that might be better for you to "gift" her instead.
Most people will appreciated your respect for their feelings and beliefs.

I would think it would ok to give her some cookies or cheese and crackers tray.
