The hunter is the obvious choice but i far prefer the Mudgee and Orange regions. You go over the Blue Mountains to get to each and there are loads of great walks and activies to do in the mountains - then further west is Orange which is beautiful and has some really lovely up coming wineries and great restaurants - enjoy!
Depending when you are going you should try and get there for Food and Wine Week -

The Hunter Valley will keep you occupied for a long time but there is also the Mudgee district. It is very different from the Hunter with lots of good food and wineries. Orange is developing well as are the Southern Highlands from north of Goulburn to Canberra. Tenterfield has some lovely wines in northern NSW and you can go across the border to Stanthorpe in Queensland for more.
The Tenterfield/Stanthorpe area is a short drive from many national parks and about two to three hours from the Gold Coast. (Note my name, I live not far from Tenterfield)

Yes, it's another Hunter Valley vote from me as well. "Roberts Restaurant" at Pokolbin is one of the best restaurants in the area, and is located adjacent to "Peppers Convent" which is an exclusive getaway that has the ambience of an indulgent French Baroque hotel mixed with the distinctive character of an Australian country guest house. Roberts is not the only excellent dining venue though; there are many others. Pokolbin Village is also attached to accommodation and offers an outstanding on-site restaurant.
There's bushwalking, tennis, cycling, horseriding, if you like golf, a number of courses to choose from including the award-winning Cypress Lakes Golf and Country Club.
The Hunter Valley has 120 wineries, Hot Air Ballooning, Hunter Valley Gardens, Binnorie Cheese Factory, Pokolbin Chocolate Factory and many antique, art & craft galleries.
The area is 2.5 hours north of Sydney by car or about 45 mins from Newcastle.
I can recommend everything mentioned above except for the hot-air ballooning which I have not been game to try yet.

hunter valley is the only place to go food wine day on the green golfing flying ballooning horse riding bull riding
and lots of wine punch into your computer hunter valley
and see for yourself oh yes there is 4 wheel drive tours and push bike riding and hiking anything else and only a short distance to the beach
