The 2002 owners manual lists only synthetic oils as being recommended. Aren't regular multi-grade oils safe to use in the Freelander?

Because the manufacturer says so, If the owners manual says use synthetic oil, then please use it. DO NOT use petroleum based oils, it could cause damage. They know the vehicle best. they built it.

I'm sure petroleum oil won't hurt, but synthetic oil is better, and lasts longer. If you chose Petroleum oil, I wouldn't run it past 5,000 miles.
Amsoil makes awesome oil and oil filters, I change mine once a year or 15,000 miles.

Mobil One makes an "extended interval oil", supposed to be good for 15,000 miles, but it doesn't meet the GM4718 spec, so I can't use it.
