I LOVED making the milk carton gingerbread house when I was a little kid. We would use recycled milk cartons (small milk boxes washed of course and stapled shut at the top) and paper plates for the base and they made the perfect little house shape, we put graham crackers around the house like siding using frosting like glue and could put whatever other goodies/candies (the spearment gummies always made nice bushes, i remember using m&ms and gum drops and mini-candy canes) we wanted on the house to try to make it look like a house or whatever we wanted it to look like but it was always fun and we always looked forward to it.

One of the favorite activities I remember doing as a child were the reindeer sandwiches, which we made ourselves in the class. For some reason, it made plain old peanut butter sandwiches taste magical to me! There are instructions for these and several other fun activities here:

I think the reindeer faces made with children's feet and hands would make a really cute keepsake.
We made yarn wreaths like this when I was older.

It was a fun activity, and if your children are pretty good with their hands, then it would be a fairly safe activity. Just pre-cut the strips for tying and form the coat hangers yourself. You can use children's coathangers to make a smaller wreath, so they don't have to be at it quite so long, or have all of the children work together on one wreath for the classroom.

painting is always a good idea. finger painting is even better. go to the craft store and buy several of those sheets of white posterboard (posterboard is better than paper because it is much stronger, good for painting), or a few large pieces of paper (large enough for more than one kid.) then draw a big christmas tree on each of the pieces of paper. let them go to town with it! it would also be a good idea to line the floor and give them something to wear over their clothes....finger paint is washable too, so no worrying about stains if there is a spill.

Try making edible play with them or salt dough. The salt dough can be shaped, dried and painted or use holiday cookie cutters, baked and then painted.
