Kate is my favorite all-encompassing option, being a crisp, classic shortening equally suitable for a five-, 25- or 50-year-old. ;) Just a pet form that manages to sound polished and attractive no matter the person's age. Love it.
Kit, Kat (or Kit-Kat LOL), Kitty, etc. are all fine familiar forms, but more what I'd see a child calling her 8-year-old sibling. Not so much a nickname that could -- or should -- carry over into adulthood. Conversely, I find Kathy slightly dated a choice. A bit softer and less "spunky" than Kate, but still stuck in the 60s for some reason. Due for a comeback soon, but I think Kate's still reigning supreme at the moment. ;)
I also quite like Katia/Katya, by the way. Obviously it could seem a bit off on a child of obviously-different heritage, but I had a Russian friend named Katya (that spelling) and it was quite an intriguing, fun little nickname. ;) Just a thought.

I've known a Kat, a Kathy, a Katie and someone who goes by the full name of Katherine.
I honestly think that it depends on the person. Each had a "personality" that fit the name they went by!

I call my best friend Kitty but she hates it because she prefers to be called Katherine
Kit is really cute
Kat can be adorable but it depends on the person
Kate is traditional
Katie is also cute
I don't know. Name the little girl Katherine and decide what you call her once you get to know her alittle and can sorta tell her personality!

I personally like Kat...all the girls I've ever met named Kat were really cool, artsy people.
Second, I'd have to say Katie, or Katy (that's how I'd spell it)
