Mu husband makes a really good one. He adds chopped fresh (cooked) mushrooms, and uses stuffing mix instead of bread crumbs. All the rest of the stuff he adds is normal - like finely chopped onions and garlic. We don't put celery or green peppers in ours since I don't like them, and he adds an egg, an tops it once it's almost done with a mixture of ketchup and honey.

after the typical spices i mix bbq and ketchup for the top and bay leaves. sometimes i will put mozzerella in the middle for something different- but only if im not feeling lazy

My Mom puts grilled onions and a lot of spices (mostly garlic powder) in mine.
