i am looking at taking a couple classes at the local college. just wondering if anyone knows- if i am a non degree seeking student and i change to degree seeking will all my credits still count towards the degree later? thanks.

Some colleges and universities have a limit on the number of credits that will transfer under these circumstances. You need to check with the specific school in question.

it depends on the school, but most schools will let you do so with limitations (a max of 8 units or so).
