I have four 64 oz - one filled with air, one with soil, one with small pebbles, and the last with warter. Each have a plug and a thermometer. The each will sit in direct sunlight and after sun down I will record their temps. Each hour (for the next two hours)after that I will record their temps.

I guess you mean retain.

Water will be the slowest to heat but it will also be the slowest to cool. It has a very high specific heat.

Soil (esp. if dark) should heat up quickly, but I doubt it would retain the heat for long.

The pebbles will also take along time to heat and cool because rock is a poor conductor of heat.
