Almost any profession will do if you plan it right.

The hardest may be W/Elementalist and W/Necro do to the warrior's low energy, BUT if you take those classes unqiue buffs you could build a powerful charater.

Warrior/Monk is common for new players though, and might be a place to start.

(If you have Factions, consider W/Ritualist. With Nightfall, W/Paragon might be an idea.)

If you are new to guild wars the basic build is a Warrior/ Monk .. it gives you the help of health and the attack and defense of a warrior . You get to swing a sword while casting Heal breeze ( yes i know , but he said he is new ) on yourself to keep your health up and use the heal sig . Please whatever you do dont go frenzy then heal sig right after ..

Yuo could try monk and use vigorous spirit but use Healing Signet because monk healing is not for warriors. You can also try Ranger, for apply poison. With a considerable amount of Wilderness Survival with the ranger, then you can strike with poison. Elementalists, you can pull up damage up to 20 points and use their armor increasing, speed increasing (Armor of Mist), and attack increasting (Conjure Frost, Conjure Flame, Conjure Earth, Conjure Lightning - NOTE ONLY IF YOU HAVE A CORRESPONDING WEAPON (Example: conjure lightning = lightning weapon)) capabilities. Truely it's your choice
