You may or may not be old enough to remember the 1950's book and Doris Day movie "Please Don't Eat the Daisies." The title always seemed like a silly one because until recently no one would seriously consider eating flowers, for Heaven's sake-except maybe cauliflower. Of course, people do eat artichokes and broccoli, but these plants don't have the word "flower" in their names, so who knew? Well, it turns out that you can eat the daisies, at least English Daisies-the little white ones that pop up in your lawn. And you can eat a lot of other flowers too.
After falling out of favor for many years, cooking and garnishing with flowers is back in vogue once again. Today, gourmet restaurants from are featuring such dishes as Quiche and Pansies, Dandelion Omelet, Carnation Cherries Jubilee, Marigold Mincemeat Pie, Violet Pineapple Parfait, and Lavender Apple Crisp to name just a few. But you don't have to be a high-end gourmet to wow friends and family with some dishes that rely on flower power.
Young leaves and stems of the Crown Daisy, also known as Chop Suey Greens or Shingiku in Japan, are widely used in oriental stir-fries and as salad seasoning.
Shasta Daisy petals (of "He-loves-me, he-loves-me-not" fame ) are of the same family. They may not put meat on your bones like potatoes, but one can eat the daisies or look at them, depending on the mood of the moment.
Dandelions - Member of Daisy family. Flowers are sweetest when picked young, and just before eating. They have a sweet, honey-like flavor. Mature flowers are bitter. Good raw or steamed. Also made into wine. Young leaves taste good steamed, or tossed in salads. When serving a rice dish use dandelion petals like confetti over the rice.
English Daisies have a tangy and leafy taste.
Chamomile has daisy-like flowers which make an interesting flavored beverage or a rinse for blonde hair if you don't like the taste. Chamomile (Anthemis nobilis) is an old medicinal plant of the Romans. It is the main ingredient of baby tea and many other soothing herbal teas that are designed to promote relaxation and sleep.
Golden Margurite (Anthemis tinctoria) has profuse daisy-like flowers and the same pungent aromatic leaves.
Many flowers are desireable as food or seasoning for food. One needs to really use caution when choosing edible flowers. Only eat flowers when you are absolutely certain they are edible. Just because a flower is used as a garnish, doesn't mean it's edible. Never eat a flower that has been treated with a pesticide that was not labeled for use on food products. Always follow the pesticide label instructions for harvesting. Never eat flowers from florists, nurseries or roadsides. Do not eat flowers picked from the side of the road. Once again, possible herbicide use eliminates these flowers as a possibility for use. Many grocery stores and gourmet markets now sell edible flowers. If you are choosing homegrown flowers to eat, be certain you know your flowers as not all flowers are edible. Some can cause serious stomach problems and some are quite poisonous. Pick homegrown flowers in the morning or late afternoon when the water content is high.
