They generally use a pro camera with a very fast frame rate like the Canon 1D MkIII or 1D MkIV (they use Nikon as well, but I don't know those cameras). The biggest misunderstanding that you have in your question is the assumption that they "fill the frame" with the player when they take the shot. This would be nearly impossible with the fast action. Instead they use lenses like the Canon 70-200mm f/2.8, shoot wide and then crop the shots to "fill the frame" of the final photos they submit. Keep in mind that for news agencies, especially those that will post the photos online, large resolution files are not necessary or even wanted. A shot that was originally taken at 10 or 15MP can be cropped down to 2MP and still look great online, or even in print like a newspaper. This allows the photographer to take photos of the general area of the field where the ball is at, and then later crop the photo down severely so that it only shows the composition they want.

Right now? I'd say Lionel Messi. He's the european top scorer this season (12 goals= top scorer in the champions League as well as in the Spanish Liga, he scored more goals than C.Ronaldo) and he carries Barcelona on his shoulders with only 20 years of age, that's extraordinary. Kaka has won the champions league but since then he has been playing like crap and Milan are relegated now in the italian Serie A to the 9th position.
