Bistec Ranchero (ranch-style steak).
Choose a cut of meat according to your budget.
If you want to splurge, do that too!
Ribeye, club steak (bone-in ribeye), top tender loin,
new york strip, or eye of round (little bit tougher than
the rest).
Cook it any way you want except roasting.
You can pan fry it, broil it or grill it. Grilling is best
for me. Just remember, all these methods require
optimum temps (375 degrees). Seven minutes per
side for medium well, five minutes for medium rare.
Once it's done, you will have some warm salsa to
pour over it (hot, medium, or just right).
You will also have rice and refried beans on the side.
Don't forget a little salad topped with some sour cream.
On a hot plate or skillet, warm up some corn, or flour
tortillas to go along with meal.
If you do this just right, I can assure you that your
boyfriend is going to love you forever! He just
might propose hitching up with you on the spot!!

Enchiladas tres colores (3 color "cheeses" enchiladas). We have never had Mexican side dishes, but since you mentioned it, it might be a nice touch in addition to the turkey and pumpkin pie.

your boyfriend is very lucky man.if i was you,i;d ask his mother if there Spanish.if not then try something simple and to the point.like choriso with eggs and add a little cheese mixed in.the aroma of the choriso will entice him.the eggs are lite in filling and the cheese adds extra flavor.it's my favorite and in case your wondering i'm spanish.
