Rome-Florence-Venice: Take the train. Italian trains are cheap compared to the rest of Europe.

Italy to Zurich: From Venice take the train. It is a bit expensive, but the famous view of the Alps makes it worth. From Southern Italy you could fly.

Zurich to Barcelona, Madrid or Lisbon: Fly.

Barcelona-Madrid: Train or bus. There is an overnight hotel train between the two cities that is highly recommended.
