I add lightly toasted almonds and a touch of vanilla.
But they're good plain, with chocolate chips, peanut butter, whatever.
Check the recipe on the Quaker oats regular box; it's THE classic.

I make then with a number of diferent configurations chocolate chips, raisins, i made a batch and they were diferent. nothing special but I had some potato chips in my mouth and sneezed, they had just a little crunch to them.

Years ago, I used to use the oatmeal mixes that tasted like cinnamon or apples and make them with that. Everyone raved over them.
