An embedded system is a special-purpose computer system designed to perform one or a few dedicated functions[1], sometimes with real-time computing constraints. It is usually embedded as part of a complete device including hardware and mechanical parts. In contrast, a general-purpose computer, such as a personal computer, can do many different tasks depending on programming.

An embedded system is a "computer on a chip." The program code is embedded into the electronic device so that the hardware part (integrated circuit) and the software part are inseperable.
I have listed websites for a microcontroller family that I find interesting.
Return question:
How is it that someone who doesn't know what it is wants to build one?

an embedded system is a self-contained environment with a cpu, firmware and software. an example is the lego rcx robotic system when it has been programmed. other examples are the on-board computers in a car that control ignition, transmission and more. there is no keyboard, mouse or display for the embedded system. it has sensors and controllers that control motors, relays and other outputs.

A self-contained computer with customized and miniaturized part and programming that is designed to add the "smarts" to some piece of item be it an appliance or a toy.
It needed to be done so in a way no "computer-like" parts would be visible to an end-product.
