Francis Coppola's film is the one that stayed closest to the original sorce material. Bram's novel is written as a series of journal entries, interviews, recording transcripts, etc. telling of this mysterious count that is buying up a castle through Jonathan Harker. The only thing that Coppola added was the connection to Vlad The Impaler (that's not in Stoker's book). All the other films that have come use the same scenario, but change the characters, especially the women. Sometimes Mina is the love interest, sometimes she's not. The 1979 film starring Frank Langella changed the characters around a lot.

Bram Stoker's Dracula, the one with Winona Ryder and Gary Oldman was closest to the novel, which was actually written as a gothic romance. Most Dracula movies concentrate on the bloodsucking, not the back story of the Count's love for Mina who is the spitting image of his long dead wife.
