Do it back to her, and flip your hand over and flick her off mid-wiggle. Should send the message.

Gently, grab her hands and slowly put them at her sides or in her lap. This worked for me when I would get too excited and talk with my hands. Friends and co-workers stopped me of this habit. :)

just keep looking at her fingers and not her face. she wants you to look at her face (naturally) so she'll stop.
