For my forensic science class I have to do some kind of project that would be presented on a poster. The subject can be anything about forensic science. The class is more chemistry based than biology based. I hope you guys can help me with some ideas. I really appreciate it!

Fingerprints are the easiest.

You can go to Wikipedia: http://en.wikipedia.org/wiki/Fingerprint and download these images: http://en.wikipedia.org/wiki/Fingerprint#Classifying_fingerprints
then create a poster showing the different types of fingerprints: Arch, Right Loop, Whorl and Tented Arch.
You can copy the images blow them up and then print them out then below them you can draw a simplified version with only a few lines or you can highlight one line so the class can see the shape that gives the style of print its name.

For a mostly chemistry based class I would explain what Luminol is: http://en.wikipedia.org/wiki/Luminol
"Luminol is used by crime scene investigators to locate traces of blood, even if it has been cleaned or removed. The investigator prepares a solution of luminol and the activator and sprays it throughout the area under investigation. The iron present in any blood in the area catalyzes the chemical reaction that leads to the luminesence revealing the location of the blood. The amount of catalyst necessary for the reaction to occur is very small relative to the amount of luminol, allowing the detection of even trace amounts of blood. The glow lasts for about 30 seconds and is blue. Detecting the glow requires a fairly dark room. Any glow detected may be documented by a long exposure photograph."

You can draw the molecule, composed of two benzene rings.

Then below that you can draw the 3 molecules that describe the chemical reaction used to create luminol.

Finally, you can illustrate the chemical reactions that happen when the luminol reacts with the iron to indicate the presence of blood.

The best one I can think of is PCR. As I'm sure you probably know, PCR revolutionized the way that DNA identification can be used. And blood spatter is pretty neat, but there isn't much chemistry there.
