You have a few options
1. Ask for an extension. If your teacher likes you and your a good student there's a good chance she'll give it to you.
2. Wait for your mom to come home and just stay up really late to finish it.
3. Just do a quick last minute project (what happens if you heat up a marshmellow) now.

Oh and I don't know if your school does this but there's also reasearch. (for the scientific method)
