You are going to find that NHL players are the least conceited, most friendly group of people of all pro athletes.
Just be normal and don't be afraid to chat. If you play hockey, ask for a few tips from your favourite player.

Just be yourself. From my experience, hockey players are the most down to earth athletes of the 4 major sports as well as the most approachable. Don't walk in there wearing the tightest jeans and tiniest shirt in the world. Don't act like a groupie and be like "omg jarome iginla i LOVE you!!!" Talk to them like they're normal people, b/c that's exactly what they are. Be respectful, though. Don't look like an autograph hound. I have seen it happen where people throw 4 and 5 items to get signed and the player will refuse to autograph more than one thing - b/c he knows it most likely will end up on ebay the next day. That's probably the biggest pet peeve of any athlete.
Just remember that they're no different from the rest of us - they just happen to play hockey for a living, and most likely make a ton more money than we do, haha.

The jersey and cute denim skirt or jeans. Start studying their stats if you don't know them and just be polite, ask a question or two (intelligent of course) and have them sign your jersey. Make sure you take a black sharpie and don't loan it out. Don't gush or act like a groupie. Take your camera, but keep it subtle. Most are tired and do this stuff because they have to but some really enjoy it. I almost forgot, get a program and have the players autograph it, plus it gives you something to hold during pictures so you don't feel like you are just stupidly standing there.

I don't know, but I'm now pretty sure LITY was the one who showed Timberlake how to bring sexy back. LOL
Seriously, though, these guys realize how fans feel about them so there is no need to hold back your excitement. Just be respectful and appreciative, as others have suggested.
If you're going to the arena to see the Flames, make sure you get a peek at the stick room and the equipment room. Pretty cool.

Don't talk about your hockey unless asked, don't criticize their play, don't try and be to funny (if your not funny) if you get a joke off just let it be and don't try to many more and don't just talk about hockey.
Be enthused because they might be giving up some family time to visit with you, so be polite and talk about other things in life like hobbies and activities, kids, family and just small things.

Just be yourself and ask lots of questions. If you act different than you normally are you will come off the wrong way. Don't just stand back and listen, talk to the guys. You might only get this opportunity once so take advantage of it.

if it was the Flyers you were going to meet i'd advise you to take out an insurance policy just in case lol
i'm jealous, i'd love to meet any nhl player (especially Nick Lidstrom) let alone a whole team

anyways, the most important thing ever, is don't act like they are famous or celebrity's, act like they are just normal people, don't go all gushy, and they will respect you.

If you are male, a nice black suit with a fedora should suffice.
If you are female, a nice ankle length dress, in a soft pastel colour, and a chapeau not heavily feathered should suffice.
Just act your Sunday morning best, and they will treat you with respect.
