I am absolutely fed up of paying more than double the fares in the school holidays than in off-peak times! This absolutely unfair to be penalised for having kids and not being able to go off-peak times.

Welcome to Economics 101: Supply and Demand

There are a fixed number of seats available, and an increased number of passengers wanting them.
Why should they sell you a seat for cheap when the guy behind you is willing to pay more for it?
They are not a charity. But the extra profits made during peak travel times allow them to discount tickets the rest of the year.
The people that work there work hard, especially when they are busy, they are earning the money.
