I am 27 years old and have a pretty good resume but I don't have a college degree. I need a good job so bad because I have two small children.

Three crimes of moral turpitude over a 6 year period doesn't point towards a 'temporary lapse in judgment' that most employers will overlook, it points towards an inherently dishonest nature. FEW employers will want to take a chance on you until you've shown, by a LONG period without any more trouble, that you've turned your life around and cleaned up your act.

hmm well sounds like u need a job badly, clean up your act a bit and try to aply, act nice and professional and somebody might see that ur a good person that made some mistakes.

That's probably going to depend on what kind of theft charges they are.

If they aren't felonies you aren't required to disclose them .

It'll be a bit more difficult, but it's not impossible. As said before, if they aren't felonies you don't need to bring them up.
