I don't know why not. It is, however a matter that would come under you're college's rules and regulations. I'd check with the class registration people at your school to nail it down.

As part of your optional courses, it shouldn't be difficult to work in archeology. I had a teacher in high school with a BCom who was only a few credits from the equivalent of a psychology major because he was desperate to fill his day with "something other than dry business courses." (his words, not mine.)

In terms of a minor or a double major, I guess it depends on how your uni works.

Yes, you may need to take some other classe but it is possable.
